So this recipe is not entirely my own, but was born out of the necessity to get my son to eat a healthy breakfast and use ingredients I had on hand. You can find the original recipe here if you're not crazy about the ingredients I used for ours (which makes these vegan pancakes)...
Yields about a dozen pancakes
1 1/4 cups Whole Wheat Flour
1 tbsp raw can sugar (or any sugar you have on hand)
2 tsp baking powder
1/2 tsp salt
1 ripe banana
1 1/4 cups of soy milk
1/2 cup blueberries (fresh or frozen will do)
1. Mix together the whole wheat flour, baking powder, sugar and salt (note that the sugar may not be necessary because of the natural sweetness of the banana that will come into play later. It's your call).
2. In a mixing bowl, mash up the banana well with a fork (which is basically an egg substitute for your pancakes). Add to it the milk, and then the flour et al that you previously mixed together.
3. Mix just until well blended. Then add blueberries to the mix as well.
4. Start frying those pancakes and enjoy!
